文化元年（1804年）創業、新潟県柏崎市の阿部酒造による、米麹だけで仕込む「全麹」の挑戦作です。通常の日本酒では総米に対する麹の割合は2割程度ですが、本品は仕込みに使う米のすべてを麹にするため、小さな仕込みでも何度も麹室で麹を造る必要がある、非常に手間のかかる一本です。「清酒の製造の範疇で全麹のお酒を造れないか」という発想から生まれ、ほぼ米麹で造った前身「ホボホボゼンコウジキモト」の流れを汲んでいます。アルコール度数は14度。全麹ならではの、ほかにない個性的な味わいで、蔵元も洋食との相性の良さを勧めています。
