神奈川・中沢酒造の11代目・鍵和田亮氏が奇跡の復活を遂げさせた『松みどり 純米吟醸 S.tokyo』。1909年に発見されるも一度も実用化されなかった現存2番目に古い幻の清酒酵母「S.tokyo」を用いたロマン溢れる逸品です。明治時代から蘇った酵母ならではの、白ブドウを思わせるフルーティーで甘酸っぱいアロマと爽やかな酸味が特長。アルコール度数14〜15度の原酒で仕立て、奥深いコクを残しつつ驚くほど滑らかで飲みやすいタッチに仕上げました。ワイングラスで冷やして味わえば、現代の酒とは一線を画す気品が広がります。酵母ゆかりの地・ドイツを見据えた挑戦的な一本です。
