島根県産「山田錦」を使用し、江戸時代から続く伝統技法で醸された「玉櫻 生酛山田錦」。玉櫻の生酛ラインナップにおいて中心的存在であり、「生酛でどれを選ぶか迷ったらこれ」と蔵元も自信を持って薦める看板酒です。乳酸菌と自然の酵母が育む生酛ならではのしっかりとした酸と力強い旨味に、山田錦特有の丸みと優しい甘みが加わることで、全体が穏やかでバランス良くまとまっています。60〜70℃の熱めの燗につけると、酸がきれいに立ち上がり、ふくよかで野太い表情が一段と際立ちます。冷やよりもお燗で本領を発揮する、玉櫻の酒造りの哲学が詰まった至極の一本です。
