群馬県川場村の土田酒造は、添加物に頼らず米と水と微生物の力で醸す酒造りで知られる蔵です。研究醸造シリーズの「研究醸造36低アルコール」は、アルコール度数一桁でありながら濃厚さも両立させることを目指して挑んだ一本。群馬県産あさひの夢を精米歩合90%に留め、焼酎用の黄麹と白麹を用いて麹歩合を高め、生酛造りで低温でじっくりと醸しています。加水をしない原酒のまま、度数9%に着地しました。香ばしいカラメルや杏子、蜂蜜を思わせるリッチな風味を持ちながら、口当たりは軽やかです。冷やして軽快に、お燗でまったりと、ロックで酸を際立たせて爽やかにと、飲み方次第で表情が変わるのも魅力です。
