秋田県にかほ市、鳥海山の麓で室町時代から酒を醸す飛良泉本舗の山廃純米酒です。原料米には、亀の尾を祖とする信交190号を改良した希少な酒造好適米「改良信交」を使用し、精米歩合60%、アルコール度数15%に仕上げています。米由来の鮮やかな酸と山廃仕込みならではの奥行きある酸が重なり合い、米の旨みを引き立てる飲みやすい味わいが魅力です。本品は火入れのため、生酒に比べて落ち着いた口当たりで、穏やかにまとまった印象を楽しめます。冷やしても美味しく、常温からぬる燗にすると旨みと酸がほどけて一層ふくよかに。ハタハタの塩焼きや焼き鳥、チーズなどと合わせてお楽しみください。
