石川県白山市で酒を醸す吉田酒造店の「手取川」から、秋季限定のひやおろしが届きました。冬に仕込んだ酒を夏の間じっくりと寝かせ、旨味がのった秋に出荷する季節の一本です。麹米に兵庫県産山田錦、掛米に石川県産五百万石を用い、精米歩合60%、金沢酵母を使って伝統的な山廃仕込みで醸しました。無濾過のまま生詰めした原酒で、アルコール度数は15度。山廃らしい奥行きを備えながらも、モダンでスタイリッシュな印象にまとまり、スムースな舌触りと綺麗な味のまとまりが楽しめます。冷やでも美味しく、ぬる燗にすれば旨味がふくらみます。秋刀魚の塩焼きやきのこ料理、鍋物など秋の食卓と合わせてどうぞ。
