新潟県柏崎市・宮之下で、阿部酒造で酒造りを学んだ坂本一浩氏が立ち上げた弥栄醸造の「ITTEKI（一擲）」シリーズです。仕込みに使う米をすべて麹にした「十割麹酒」で、種麹ごとの個性を表現することをテーマにしています。本品に使われた種麹「白夜」は、しっかりと糖化を進める一方でアミノ酸が出過ぎない性質を持ち、雑味の少ないきれいな甘みを生み出しやすいのが特長です。グラスからは柑橘を思わせる香りが漂い、なめらかな口当たりとともに、はちみつをかけた柑橘のような甘みがゆったりと広がり、中盤からすっとキレていきます。
