新潟県柏崎市・宮之下集落の古民家を改装した醸造所で、坂本一浩氏が営む弥栄醸造の「ITTEKI（一擲）」シリーズです。坂本氏は酒販店の店長などを経て、阿部酒造で酒造りを学んだのち独立。名前は故事成語「乾坤一擲」に由来し、人生をかけた勝負への想いと「一滴」が重ねられています。最大の特徴は、仕込みに使う米をすべて麹にした「十割麹酒」であること。米だけを原料としながら、酒税法上は「その他の醸造酒」に分類されます。種麹ごとの個性を表現するのがシリーズのテーマで、本品はその名を冠した一本です。麹由来のふくよかな甘みと酸をお楽しみください。
