原料には岩手県産米を使用し、副原料に紫波産もち米の発芽玄米を採用。人口添加物を使わず、生酛と速醸酛の長所を掛け合わせた独自のハイブリッド製法で醸されています。南部杜氏伝承の吟醸技術と低温発酵が生み出すのは、凛とした華やかな香りと、澄み渡る透明感。もち米発芽玄米に由来する、どこか懐かしく綺麗な甘味と旨味が広がります。「果てのない醸造酒の可能性を究める」という名の通り、クラフトサケの概念を刷新する最高傑作の一杯です。
